The back of house drives the schedule. Type I hood installation with the correct capture area and makeup air, welded exhaust duct with the required clearances and access panels, a wet chemical suppression system tied to gas shutoff, grease interceptor sizing and installation, floor sinks and indirect waste at every required fixture, sloped quarry tile or resinous flooring with coved base, FRP or stainless wall panels, adequate gas piping and pressure for the equipment schedule, and refrigeration line runs planned before the ceiling closes. We coordinate the equipment package against the plumbing and electrical rough-in so the fixtures land where the drawings say they do.

Health department, fire, and construction approvals

A restaurant project answers to the local construction office across all four subcodes, the fire official for suppression and alarm, and the local or county health department for the plan review that governs finishes, hand sinks, food contact surfaces, and warewashing. Those reviews have different priorities, and a detail that satisfies one can create a comment from another. We prepare the drawing set with all three in mind, file early, respond to comments quickly, and walk each inspector through the space so the certificate of occupancy is not held hostage by a missing hand sink or an untested suppression system.

Dining rooms, bars, and the guest experience

Front of house is where the design budget shows. We build banquettes, millwork bars with proper under-bar equipment layout, wood and stone bar tops, feature ceilings and acoustic treatment that keeps a full room conversational, lighting on layered dimmable circuits, custom wall paneling, and the entry sequence that sets the tone. Accessibility is handled properly, including entry thresholds, path of travel, restroom clearances, and accessible seating, because a beautiful room that fails an accessibility review does not open.

Every day between lease commencement and opening burns cash, so we sequence long-lead items first: hood and suppression, exhaust fans, electrical service upgrades, and custom millwork.
